Even if he doesn't like to hear it himself, he is often mentioned as the "water carrier" of Wolfgang Overath, Simmet was a regular player for his entire years at 1. FC Köln. Between 1970 and 1977 he was used in 258 Bundesliga games in a row - a Bundesliga record for outfield players. Initially used in attack, he developed into a defensive and central midfielder over the course of his long career. A player with a great long-distance shot, strong kick, nice curve, would often take corner kicks. Solid technique, both feet strong, could be found everywhere in the field, although mostly in the right side of midfield or in the centre. A lot of running, pretty fast in his runs too, however not too agile. His passing skills were decent, he wouldn't make mistakes in his short passing, while occasionally trying out weighted balls.

Heinz Simmet came to FC Koln after relegation with Rot-Weiss Essen, playing for FC in the Bundesliga in eleven seasons, from 1967/68 to 1977/78. Simmet made his Bundesliga debut under coach Willi Multhaup in 1967 in . At the end of the round he had played in 31 league games and scored three goals in reaching fourth place.
His performance was already recognized in the first half of the season on November 22, 1967 by being called up to the U23 national team by the DFB. The strong, combative endurance runner and extremely important driver and ball carrier experienced the sporting highlight in the DFB Cup in his first year in Cologne. Simmet and the FC reached the final on June 9, 1968 in the Südweststadion in Ludwigshafen against the surprise team VfL Bochum. In front of 58,000 spectators, Cologne sat with the midfield around Simmet, Heinz Flohe and Wolfgang Overath. After goals from Carl-Heinz Rühl (2), Heinz Hornig and Johannes Löhr, they won 4-1 and took the cup to Cologne.

When Multhaup's successor Hans Merkle had little success in the Bundesliga in 1968/69 (13th place), Simmet reached the semi-finals with Cologne in the European Cup Winners' Cup. But that was the end of the game against FC Barcelona in April 1969 (2:2, 1:4). Simmet and 1. FC Köln also moved into the 1970/1971 Trade Fair Cup after successes against Racing Paris Sedan (5:1, 0:1), AC Florenz (2:1, 1:0), Spartak Trnava (1:0, 3 :0) and in the quarterfinals against Arsenal FC (1:2, 1:0) in the semifinals in April 1971 against Juventus Turin. However, the Italians prevailed 2-0 in Turin after a 1-1 draw in Cologne and denied FC a place in the final.

The defensive midfielder had a very good season in 1972/1973 under coach Rudi Schlott. In the Bundesliga, FC became runner-up and Simmet played all 34 round games and also scored eight goals. In addition, the “Billy Goats” made it into the cup final again and played against Borussia Mönchengladbach, a legendary final on June 23, 1973 in Düsseldorf. Günter Netzer scored in the 93rd minute of extra time to make the final score 2-1 for Gladbach.

Simmet stayed at 1. FC Köln until the end of his career in 1978. This was also his most successful year, winning the German championship and the DFB Cup under coach Hennes Weisweiler, although he only made 23 appearances due to injuries. Heinz Simmet was considered an uncompromising fighter who reached the DFB Cup final five times with Cologne and won it twice. He played a total of 477 competitive games and scored 48 goals for FC. After his professional career, he played for years in the amateur sector at SC Blau-Weiß 06 Köln (1978/79), at SpVg Frechen 20 (1979–1983), where he chased the ball with Frechen idol Karl Lambertin and spent three more rounds as player-coach at BSG Macha Heppendorf from 1983 to 1986.
