He made his debut on April 30, 2016, in River Plate's 0-0 draw against Vélez Sarsfield, coming on for Pablo Carreras at halftime, and from the 2017-18 season onwards, he became an absolute starter at the club. During his time at River Plate, he won nine domestic titles and five international titles, being part of one of the most glorious periods in the history of the Argentine giant. In 2018, he started in both legs of the Copa Libertadores final that River Plate won against Boca Juniors, in what would be the most important match in Argentine football history. In 2020, after outstanding performances, he was named the Best Defender in Argentine Football and was part of the Ideal Team of the Copa Libertadores and the Ideal Team of America. On August 13, 2021, his transfer to Sevilla was officially confirmed for €11,000,000 gross for 80% of Gonzalo's economic rights, plus a 15% capital gain on any future sale of the player. There, he won the UEFA Europa League in 2023, scoring a decisive penalty in the final against AS Roma. On August 23, 2023, Montiel was loaned to Nottingham Forest F.C. in the Premier League for the 2023-24 season with an option to buy.
He debuted for the Argentina national team in 2019, being part of Lionel Scaloni's squad. Two years later, in 2021, he played a key role in Argentina's Copa America triumph. In November 2022, he played in the World Cup in Qatar where Argentina became champions against France, crucially scoring the penalty that secured the title for the Argentine team in the penalty shootout.
